Crunchy Custard Crumble (Low Fibre)

Serves 4, 3-4 grams of fibre per serve.
  • 2 large custard apples, peeled, and pipped
  • 1 cup frozen blueberries
  • 75grams of corn flakes
  • 2 tablespoons coconut or brown sugar
  • Coconut oil spray
  1. Preheat oven to 200C
  2. Place baking paper on a baking tray
  3. Cut the custard apple into wedges and lay on the baking tray
  4. Top the wedges with frozen blueberries (add more if needed)
  5. Top fruit with cornflakes then sprinkle of sugar of choice and spray with coconut oil
  6. Place in oven and cook for 10-15 minutes until tops are golden
  7. Serve with plain or vanilla yoghurt
