Coconut Peanut Butter Balls (Low Fibre)

(12-15 balls) 1-2 grams of fibre per ball
*Vegan, vegetarian friendly
  • 1 cup of minute oats
  • 2 tablespoons of coconut flour
  • ½ cup of rice bubbles
  • ¼ cup of smooth peanut butter (slightly warmed so it is easy to pour)
  • 1 tablespoon of coconut oil ( slightly warmed to liquid state)
  • ¼ cup of honey
  • ¼ teaspoon vanilla extract
  • ½ cup of *desiccated coconut to coat the balls in
  1. Mix oats and coconut flour in a large bowl, gently add rice bubbles and mix through
  2. In a separate bowl mix slightly warmed peanut butter, coconut oil, honey and vanilla extract together until well combined
  3. Let the mixture cool a little and then gently mix it into the large bowl with the dry ingredients
  4. When thoroughly mixed through gently form (so as not to crush the rice bubbles) make 12-15 small balls
  5. Roll the formed balls in the *desiccated coconut
  6. Leave covered in the fridge for 30 minutes before serving, store in the fridge
*may not be suitable for ostomates
