Coconut amoretti Christmas balls (High Fibre)

40 balls, approximately 2-3 grams of fibre per ball

Ingredients
  • 450 grams of desiccated coconut
  • 100 grams of rice bran
  • 395 ml can of coconut milk
  • 70 grams of craisins, finely chopped
  • 1 teaspoon of almond essence
Method
  1. Line two large baking trays with baking paper
  2. Preheat oven to 180C
  3. Mix desiccated coconut, rice bran, coconut milk, craisins and almond essence in a bowl, until thoroughly combined and fruit looks to be evenly distributed
  4. Spoon out one level tablespoon at a time to make approximately 40 balls
  5. Bake balls for 5-7 minutes then swap top tray to bottom, and bottom tray to top for another 5-7 minutes or until the balls are lightly golden in colour
  6. Cool before serving
