Caramelised apple with pan seared chicken sausages, lemon herbed grains (High Fibre)

Makes 4 serves, approximately 5-6 grams of fibre per serve
*V, VG swap chicken sausage to vegan sausages

Ingredients
  • 8 sausages of your choice
  • 1 bunch of watercress
  • ¼ cup finely chopped basil leaves
  • 100 grams of walnuts
  • 400 grams of cooked quinoa
  • 500 grams of red apples, cored and halved
  • Zest and juice of one lemon
  • 3 tablespoons of apple cider vinegar
  • 1/4 cup of olive oil plus additional tablespoon olive oil for cooking sausages
  • Salt and pepper to taste
Method - lemon herbed grain
  1. Combine cooked quinoa, lemon zest and juice, chopped basil and 1/3 cup olive oil in a large bowl until all the ingredients are blended through add salt and pepper to taste
  2. Leave aside whilst cooking sausages so the herb and lemon have time to infuse into the quinoa
 
Method - apple and sausages
  1. Heat a large heavy bottomed fry pan on medium add one tablespoon of olive oil
  2. Place apples flat side down and brown then turn continuously until all sides are brown
  3. Skin sausages may need to be pricked before adding to the pan
  4. Add sausages to the pan, and brown evenly add a little water if there is no liquid in the pan and then add apple cider vinegar and cook for a further 5 minutes until there is a thick liquid
  5. Take pan off the heat and add watercress and walnuts and toss through adding salt and pepper to taste
  6. Serve with juice and grains
