Baked Banana Nut Nibbles – (Low Fibre)

Makes 12-16 serves, approximately 2 grams of fibre per serve

* Vegetarian, vegan

Ingredients
  • 320 grams of rolled rice/rice flakes
  • 50 grams of shredded coconut
  • 585 mls milk of your choice
  • 50 grams of sugar of your choice
  • 3 mashed ripe bananas
  • 125 grams smooth peanut or cashew butter
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 3 teaspoons vanilla extract
  • Plain Greek yoghurt, coconut shavings and Dutch cinnamon to decorate
Method
  1. Pre-heat the oven to 180C
  2. Put rice flakes, coconut and coconut into a bowl and mix thoroughly
  3. In another bowl place milk, sugar and vanilla and mix thoroughly
  4. Add mashed bananas with smooth nut butter of your choice and beat with an electric mixer until ingredients blended through
  5. Blend dry ingredients with wet ingredients and mix through
  6. Grease a 20cm X 23 cm baking tin and pour the mixture in carefully so the mixture spreads evenly
  7. Bake in the oven for 25- 30 minutes or until the mixture rebounds to the touch and is golden brown on top
  8. NOTE can also make fabulous individual muffins; pour mixture into individual cupcake papers in a muffin tray fill to just under the top of the paper cup. Bake in the oven for 25- 30 minutes or until the mixture rebounds to the touch and is golden brown on top
  9. Can refrigerate for up to a week
  10. Serve with Plain Greek yoghurt, coconut shavings and Dutch cinnamon to decorate
