LOW Fibre - Easy salmon patties (2)

Makes 4 serves 

Method 

Combine all ingredients (except  olive oil) in a large bowl and mix thoroughly until the mixture is smooth and well blended.  Form eight patties. Heat a large pan and coat with olive oil.  Cook patties 4-5 minutes either side until golden.  Creamy dill sauce - Blend all ingredients well. Serve patties with lemon wedges, creamy dill sauce and an iceberg and cucumber salad

 

Ingredients 

  • 1 tablespoon of olive oil
  • 1 tablespoon of onion finely chopped*
  • Stalk of celery chopped
  • 2 tablespoons of parsley chopped
  • 420 grams of cooked or tinned salmon drained
  • 1 egg beaten
  • 1 ½ teaspoons of Dijon mustard
  • 1 ¾ cups of fresh white breadcrumbs
  • Salt and pepper to taste
  • Cut lemon to serve
 
Creamy dill sauce
  • ¼ cup of egg mayonnaise
  • ¼ cup of plain yoghurt
  • 1 Tablespoon of lemon juice
  • 1 tablespoon of finely chopped dill
  • Salt and pepper to taste
