Ingredients
  • 400 grams of zucchinis into thin rounds
  • Four slices of wholemeal wholegrain bread, crusts cut off
  • 1 cup of onions peeled and chopped finely
  • 2 tablespoons of fresh parsley
  • 2 tablespoons of fresh basil
  • 1 tablespoon fresh oregano
  • Teaspoon of garlic powder
  • 2 teaspoons of mustard powder
  • 2 tablespoons extra virgin olive oil
  • 2 free range eggs beaten
  • 220 grams of mozzarella cheese
  • Salt and pepper to taste
