Ingredients
  • 270 grams of canned drained small brown or green lentils
  • 1 teaspoon of softened coconut oil
  • 30 grams of fresh continental parsley
  • 1 stalk of finely diced celery
  • 1 finely chopped green onion stalk
  • 100 grams of crushed walnuts
  • 130grams of goat/feta or vegan cheese crumbled

Ingredients
  • 250 grams (approx. 2.5 cups) green Le Puy lentils
  • 500 grams of uncooked risoni
  • 6 large chopped tomatoes
  • 3 cloves of chopped fresh garlic
  • 350 grams of Bulgarian fetta (or vegan alternative)
  • Juice and zest of 1 lemon
  • 80 mls cup extra virgin olive oil
  • ¼ cup of chopped continental parsley
  • Himalayan sea salt to flavour

NOTE lentils and garlic may cause wind in stoma patients puree or thoroughly blend lentils and add to the risoni as a hot sauce

  • 80 mls cup extra virgin olive oil
  • ¼ cup of chopped continental parsley
  • Himalayan sea salt to flavour
