Easy Salmon Patties (Low Fibre)

Serves 4
  • 1 tablespoon of olive oil
  • 1 tablespoon of onion finely chopped*
  • Stalk of celery chopped
  • 2 tablespoons of parsley chopped
  • 420 grams of cooked or tinned salmon drained
  • 1 egg beaten
  • 1½ teaspoons of Dijon mustard
  • 1¾ cups of fresh white breadcrumbs
  • Salt and pepper to taste
  • Cut lemon to serve
Creamy dill sauce
  • ¼ cup of egg mayonnaise
  • ¼ cup of plain yoghurt
  • 1 tablespoon of lemon juice
  • 1 tablespoon of finely chopped dill
  • Salt and pepper to taste
  1. Combine all ingredients (except  olive oil) in a large bowl and mix thoroughly until the mixture is smooth and well blended
  2. Form eight patties
  3. Heat a large pan and coat with olive oil
  4. Cook patties 4-5 minutes either side until golden
  5. For the creamy dill sauce - Blend all ingredients well
  6. Serve patties with lemon wedges, creamy dill sauce and an iceberg and cucumber salad
