Cheesy baked tortillas - Low Fibre

Cheesy baked tortillas

Low fibre (makes 6 tortillas) approximately 3-4 grams of fibre per serve
*Vegetarian

 

Ingredients

  • 225 grams pizza sauce garlic, onion and herb flavoured
  • 20 ml extra virgin olive oil
  • Extra virgin olive oil spray
  • Plain Greek yoghurt
  • Juice of one whole lime
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • ½ teaspoon sweet paprika
  • 250 grams of 25 % reduced fat mature cheddar cheese
  • 250 grams cooked shredded chicken (or 1 cup plain firm tofu for vegetarians)
  • 400 grams skinned peeled white potato
  • 400 grams of cooked drained basmati rice
  • Salt and pepper to taste
  • 6 large flour tortillas

Method

Heat oven to 210C

Spray potatoes with olive oil spray and mix sweet paprika powder through and bake for 20 minutes or until the potatoes are soft on inside and crispy on the outside

Put olive oil garlic and onion powder into a frypan and gently heat for one minute. Add chicken (or firm tofu) and 180 grams of pizza sauce, coat and mix in chicken (or tofu) and add lime juice and salt and pepper to taste.

Lay out tortillas on a clean dry surface, divide baked potato, rice, chicken mixture (or tofu) into six and layer them in the centre of each tortilla, top with cheese leaving ¼ cup for decoration.

Tuck the ends of the tortillas inward over the mixture and roll the burritos tightly and place lip side down in a deep dish

Paint the tops of the tortillas with the remaining pizza sauce and sprinkle remaining cheese on top and cover and bake for 15-20 minutes

Serve with a dollop of plain yoghurt on top
