Twisted pomegranate salad (Low Fibre)

Serves 4-6, approximately 2 grams of fibre per serve
*Vegetarian, vegan

Ingredients - salad

  • Chives
  • 300 grams of zucchini
  • 100 grams baby spinach
  • 1 red pepper (skinned)
  • Extra virgin olive oil spray

Ingredients - Dressing

  • 3 tablespoons of walnut oil
  • ΒΌ cup of pomegranate juice
  • 2 teaspoons Dijon mustard
  • Salt to taste

Method dressing

  1. Add all ingredients together and beat until they are totally combined

Method salad

  1. Cut zucchini into 3cms chunks
  2. Finely chop chives
  3. Spray zucchini and chives with extra virgin olive oil
  4. Heat a fry pan to medium heat
  5. Fry zucchini and chives until golden brown
  6. Add baby spinach leaves stir through and take off heat
  7. Make dressing
  8. Place cooled pan ingredients in a serving dish and mix dressing through serve immediately
