Twisted pomegranate salad (High Fibre)

Serves 4-6,  approximately 4 grams of fibre per serve
*Vegetarian, vegan

Ingredients - salad

  • Shallots
  • 60 grams of pomegranate arils
  • 300 grams of cauliflower
  • 100 grams of baby kale leaves
  • Extra virgin olive oil spray

Ingredients - Dressing

  • 3 tablespoons of walnut oil
  • ¼ cup of pomegranate juice
  • 2 teaspoons Dijon mustard
  • Salt to taste

Method dressing

  1. Add all ingredients together and beat until they are totally combined

Method salad

  1. Cut cauliflower into florets
  2. Peel and finely chop shallots
  3. Spray cauliflower and shallots with extra virgin olive oil
  4. Heat a fry pan to medium heat
  5. Fry cauliflower and shallots until golden brown
  6. Add baby kale leaves stir through and take off heat
  7. Make dressing
  8. Place cooled pan ingredients and pomegranate arils in a serving dish and mix dressing through serve immediately
