Coconut Peanut Butter Balls (High Fibre)

(12-15 balls) 3-4 grams of fibre per ball

  • 2 tablespoons of chia seeds
  • ½ cup of LSA (linseed, sesame, almond) meal
  • ¼ cup crushed brazil nuts
  • 1 cup of rolled oats
  • ¼ cup of smooth peanut butter (slightly warmed so it is easy to pour)
  • ¼ cup of honey
  • ¼ teaspoon vanilla extract
  • ½ cup of desiccated coconut to coat the balls in
  1. Mix chia seeds, crushed brazil nuts, LSA and oats in a large bowl
  2. In a separate bowl mix slightly warmed peanut butter, honey and vanilla extract together until well combined
  3. Let the mixture cool a little and then gently mix it into the large bowl with the dry ingredients
  4. When thoroughly mixed through make 12-15 small balls
  5. Roll the formed balls in the desiccated coconut
  6. Store in fridge
