Dijon orange summer salad (High Fibre)

Two serves, 3-4 grams of fibre per serve – 8 grams of fibre with wholemeal wholegrain roll


Ingredients - Salad
  • 150 grams of mixed leaf salad
  • 2 large oranges, peeled deseeded and sliced thinly
  • 60 grams of lightly crushed almonds
  • 100grams of feta cheese
  • 2 tablespoons of Dukka seeds

Ingredients - Dressing
  • 1 tablespoon of fresh thyme leaves
  • 4 tablespoons of extra virgin olive oil
  • 1 tablespoon of Dijon mustard
  • 4 tablespoons of lemon juice
  1. Place all salad ingredients into a bowl
  2. Shake dressing ingredients in a tight clean glass jar until they are well blended
  3. Pour dressing over the salad ingredients and gently mix through
  4. Serve with crusty wholemeal wholegrain warm bread
