Coconut amoretti Christmas balls (Low Fibre)

40 balls, approximately 1- 1.5 grams of fibre per serve

Ingredients
  • 450 grams of desiccated coconut
  • 100 grams plain white flour
  • 395 ml can of coconut milk
  • 70 grams of craisins
  • 1 teaspoon of almond essence
Method
  1. Pre-soak desiccated coconut, coconut milk, craisins and almond essence in a bowl for one to two hours, then place in a blender until the craisins and coconut are finely blended
  2. Line two large baking trays with baking paper
  3. Preheat oven to 180C
  4. Pour blended mix into a bowl, add plain white flour until mixture forms a soft dough and all ingredients are thoroughly combined and evenly distributed
  5. Spoon out one level tablespoon at a time to make approximately 40 balls
  6. Bake balls for 5-7 minutes then swap top tray to bottom, and bottom tray to top for another 5-7 minutes or until the balls are lightly golden in colour
