Star anise mushrooms – (Low Fibre)

Makes 4-6 serves, approximately 2 grams of fibre per serve

*Vegetarian, vegan

  • Mixed mushrooms 1 cup each of enoki, shiitake, Portobello and button
  • 1 tablespoon of sesame oil
  • Marinade
  • 1 tablespoon brown sugar
  • 1 teaspoon of garlic powder
  • 2 tablespoons of catsup manis
  • 2 tablespoons of orange juice
  • 2 star anise
  • Chopped coriander for decoration
  1. Preheat oven to 180C
  2. Mix sugar, diced garlic, catsup manis, orange juice and star anise in a large bowl
  3. Let stand at room temperature for 30 minutes and stir occasionally
  4. Roughly slice the mushrooms lengthways
  5. Gently warm sesame oil in a stove to oven dish take off the heat and thoroughly coat the mushrooms in the oil
  6. Add the marinade and stir through the mushrooms and place in the oven for 20 minutes until mushrooms are browned on top
