Our Bowel Care Nutritionist has conjured up an amazing Halloween brownie recipe made with lots of goodness and healthy ingredients to bring your little trick or treaters loads of fun. So delicious - they won’t even realise they’re healthy - and adults will love them too.

3 free range eggs |
2 tablespoons coconut or maple syrup |
80 ml warm coconut oil |
1 teaspoon organic vanilla extract |
100 grams melted chocolate |
280 grams precooked packet (not canned) beetroots, grated |
260 grams red apples (skinned and grated) |
1 teaspoon baking powder |
140 grams plain or gluten free four |
chocolate powder to dust brownies |
Halloween Brownies Directions
Preheat oven to 180C
Grease and line at the base and sides with baking paper a 30 X 20 shallow tin
Combine all liquids eggs, coconut oil, vanilla extract, syrup and blend well
Turn oven down to 170C
Melt chocolate and add to the liquids along with the beetroot and apple and stir thoroughly
Sift and combine into the mix, flour and chocolate powder until evenly distributed
Pour into the tin, bake for 20 minutes or until mixture bounces back
Turn the tin over onto a flat plate and let the brownie cool
Peel the baking paper off and cut into pieces decorate with dusted chocolate powder
Can refrigerate in air tight container for 4-5 days
