Twisted Turkey (274 )
Try this twist on the usual roast turkey, the sage and sausage stuffing permeates the meat with a fragrant aroma.
Ingredients
High fibre - 4 grams of fibre per serve
4 medium sized turkey or chicken breast fillets |
4 herbed pork or chicken sausage (squeeze out the filling into a bowl) |
1/2 cup slivered almonds or crushed walnuts |
1/4 cup lightly packed chopped sage leaves |
12 prosciutto slices |
salt and pepper to season |

Twisted Turkey Directions
Preheat oven to 180oC
Place the breast fillets between 2 sheets of baking paper. Using a rolling pin, flatten to about a 2 cm thickness
Season with the chopped sage and salt and pepper to taste
Add the slivered almonds (high fibre version) to the sausage meat and mix through
Divide the sausage meat into four portions and place one in the middle of each breast then roll tightly into a log shape
Wrap each roll firmly with the pancetta slices then chill for an hour before covering with foil
Bake for 40-45 minutes then remove the foil and cook for another 10 minutes until the breast rolls are golden on top
