Tasty Cheesy Tortillas

These little bundles are super-easy to prepare for a quick lunch or dinner that is packed with protein and bursting with flavour.

Ingredients

High fibre - 4 grams of fibre per serve

500 grams shredded cooked chicken
6 tablespoons mayonnaise
1 teaspoons mild curry powder
1 tablespoon shredded coconut
3 tablespoons sultanas
4 flour tortillas
Pinch of all spice
Shredded cheese to top the tortillas

Low fibre - 2 grams of fibre per serve

500 grams shredded cooked chicken
6 tablespoons mayonnaise
2 teaspoons mild curry powder
1 tablespoon strawberry jelly jam
4 flour tortillas
Pinch of all spice
Shredded cheese to top the tortillas

Tasty Cheesy Tortillas Directions

Heat the oven to 180 C

Lay the tortillas on an oven tray

Mix the ingredients together and spread down the centre of the tortillas

Roll them and place wrapped ends down on an oven dish

Warm through for 10 minutes then sprinkle with cheese, heat until cheese melts and serve warm with a leafy salad.
