Coriander Lime BBQ Prawn (250 )
A delicious fragrant summer prawn dish, quick and easy and rich in protein.
|16 large green king prawns|
|4 tablespoons extra virgin olive oil|
|1/2 cup coriander finely chopped|
|4 crusty wholegrain bread rolls|
|zest and juice of one lime|
|salt and pepper to taste|
|fresh salad greens to serve|
Coriander Lime BBQ Prawn Directions
Combine 3 tablespoons of olive oil, coriander, zest and juice of lime and salt and pepper to taste in a large bowl and mix thoroughly.
Cut the heads of the prawns, devein them and shell them, leave the tails on.
Add the prawns to the marinade and baste frequently for 20 minutes, continuously turning to coat them.
Oil the BBQ and heat to medium, add marinated prawns and cook for 3-4 minutes
Serve with the extra tablespoon of olive oil drizzled over the prawns
