140 grams wholemeal flour |
200 grams fresh or frozen corn |
80 grams feta cheese |
120 ml milk of your choice |
1 free range egg |
200 ml fresh cream (light if you prefer) |
1 spring onion |
1/4 cup chopped dill |
Salt and pepper to taste |
Olive oil spray |
Pinch of chili flakes |
Corn Fritters Directions
Place all the ingredients in a mixing bowl and mix thoroughly, add salt and pepper to flavour
Spray a non-stick pan and heat to medium
Ladle a small amount of the mixture into the hot pan in (three to four fritters per batch), try to ensure the fritters do not touch each other otherwise this makes them hard to flip
Cook for 2-3 minutes each side until golden
Carefully wipe the pan with paper towel, respray the pan and cook the next batch until they are all cooked
Serve immediately topped with chopped dill
