Lemongrass Beef (212 )
A healthy take on stir fry with fresh and tangy lemongrass and shredded vegetables. Lemon grass contains citral and geranial which are potent anti-inflammatory nutrients.

2 tablespoons sesame oil |
1 tablespoon fish sauce |
2 tablespoons sweet chili sauce |
2 packets microwave quinoa and rice |
2 tablespoons shredded coconut |
1 tablespoon lemongrass paste |
500 grams lean grass-fed beef mince |
1 tube or tub Gourmet Thai seasoning stir in paste |
100 grams bean sprouts |
2 carrots julienned |
50 grams salted peanuts |
1/4 cup chopped thai basil (for decorating) |
1 lime cut into 4 to serve. |
Lemongrass Beef Directions
Heat a wok and add Thai seasoning, fish sauce, lemongrass paste and sesame oil. Stir quickly then add the minced beef.
Stir for 3-4 minutes until browned.
Heat the ready to eat rice as per packet instructions.
When ready, add a teaspoon of shredded coconut to each packet and stir through being careful not to burn yourself with the hot steam.
Divide the mince, rice, bean sprouts, carrots in a bowl, sprinkle the Thai basil and peanuts evenly on top and add a dash of sweet chilli sauce.
Serve with a lime quarter.
