Miso Apple Soup

Quick on the go lunch packed full of nutrients



400 ml water
1/2 green apple (peeled, cored and grated)
100 grams pre cooked rice noodles
2 sachet single serve miso paste
1/4 cup chopped green chives
2 finely sliced mushrooms*
100 grams silken tofu crumbed
1 slice crispy roasted seaweed

Miso Apple Soup Directions

Rinse the rice noodles thoroughly in hot water and strain

Gently heat water to about 80 degrees

Add all ingredients except miso paste and stir for a minute or two until ingredients are warmed through

Add the two sachets of miso paste and blend through

Top with crushed seaweed flakes

Recipe notes

*Ostomates may need to blend mushrooms before adding to the soup
