Pancake Perfection (179 )

A twist on the regular breakfast pancake to increase your daily fruit intake.
Ingredients

1/2 cup plain flour |
3/4 cup milk of your choice |
2 tablespoons oil (preferably olive oil) |
1 cup of low fibre fruit – fresh (peeled and no pips or skin) or tinned (drained) |
pinch of salt |
maple syrup to drizzle |
cinnamon to decorate |
Pancake Perfection Directions
Add flour, crushed nuts pinch of salt and oil in a bowl and mix until completely smooth
Heat a greased shallow pan on medium
Gently pour a quarter of the mix into the pan and cook for 2-3 minutes then flip and cook on the other side
Repeat until all pancakes are made
Fold two pancakes into quarters arrange on each plate and add ½ cup of fruit on top and drizzle with maple syrup, sprinkle with cinnamon
