Poké Salmon (140 )

Ingredients

1 sheet of nori seaweed (sliced into thin strips) |
1/2 avocado (peeled and sliced) |
1 tablespoon chives (very finely sliced) |
20 grams *sesame seeds |
150 grams basmati rice |
60 ml low salt soy sauce (tamari) |
60 ml mirin or sherry |
2 tablespoons sesame oil |
200 grams fresh, raw, sushi grade salmon or tuna |
**salad |
6 fresh washed oak lettuce (roughly chopped) |
juice of one fresh orange |
Poké Salmon Directions
Combine the liquids, soy sauce, sesame oil, Mirin together with sesame seeds and sliced onions and sesame seeds
Dice salmon and pour the mixture over, cover and leave in the fridge for an hour this is called Poké
Boil red rice for 20-30 minutes until tender, drain and rinse rice with hot water
Divide rice into two bowls
Add poké, pour the remaining sauce over each bowl of rice and top with shreds of seaweed
Serve with a leafy green salad with fresh orange juice dressing

*Not for ostomates
** Ostomates should shred salad very finely or replace with baby spinach leaves
