HIGH Fibre - Tasty chicken burgers (2)

Makes 6 serves

Combine chicken mince, chopped mushrooms or corn kernels, coriander, egg, low salt tamari and breadcrumbs and mix well.  Form into six patties.  Heat a pan and coat with olive oil.  Cook patties on both sides until golden and cooked through (approx. 6-7 minutes either side).  Set aside



Spread sweet chilli sauce on one half of each roll for taste.  Place equal amounts of iceberg lettuce on each roll.  Layer with tomato slices and beetroot slices.  Add chicken patty and close roll.  Place a toothpick through the middle of the roll to keep it together (remove to eat).



  • 500 grams of chicken mince
  • 100 grams of chopped mushrooms or corn kernels
  • 1 tablespoon of coriander
  • 1 egg
  • 2 tablespoons of low salt tamari
  • ¾ cup of wholemeal breadcrumbs
  • Tablespoon of olive oil
  • 6 wholemeal wholegrain seeded rolls halved
  • Tablespoon sweet chilli sauce
  • 3 large iceberg lettuce leaves roughly chopped
  • Large tomato sliced
  • Tin of sliced beetroot
